  • Add an ice cube into cold tap water before mixing. The colder the water, the fluffier the pancake.
  • Over-mixing your batter leads to tough and rubbery pancakes. Just mix the batter enough to moisten the dry ingredients. Any lumps will disappear when cooked.
  • Pancakes should only be flipped once. An easy way to tell when they're ready to turn is when the top is full of air holes, and the edges start looking slightly crisp.
  • If you're cooking for a large group, the best way to keep pancakes warm is to place them, single-layered, on a cookie sheet in a warm oven. This also prevents them from becoming soggy.
