Nationally Acclaimed Chef Akira Back Announces Launch of Namesake Private Label Sake

Famed Las Vegas Celebrity Chef Takes Sake Industry by Storm

LAS VEGAS, March 13, 2014 /PRNewswire/ -- Celebrity favorite Executive Chef Akira Back of the world renowned Yellowtail Japanese Restaurant & Lounge in the Bellagio Resort & Casino in Las Vegas, NV, Kumi Japanese Restaurant + Bar at Mandalay, both managed by The Light Group, and Akira Back Restaurant in New Delhi, India is pleased to announce to the release of Akira Back Sake– Back's first private label sake.

The exceptionality of Junmai Ginjo, a higher grade of sake used to create Akira Back Sake, comes from the process by which it is made. While other brands use the method of pasteurization and charcoal filtering to mask poor taste from incorrect timing, Akira Back Sake is brewed to perfection and fermented until the exact right moment to ensure a perfect, natural flavor.

"I wanted to create sake that could be offered in its purest form," says Chef Akira Back. "It's one of the high points of my career to be able to introduce a product that I'm passionate about to sake lovers."

In the process of registration in America, Akira Back Sake is currently sold in India where it is distributed by Dhall Foods & Beverages Pvt. Ltd. Once available in the U.S., the sake will be distributed by Mutual Trading in America (Wirtz in Las Vegas) and will be available for $99 at both Yellowtail at Bellagio starting Spring 2014.

Yellowtail Sommelier Yukiko Kawasaki advises to pair the celebrity chef's versatile sake with anything from sushi and sashimi to Chef Akira's signature dishes including the Tsingature Tuna Pizza, Lobster Carpaccio and Domi with Chojang dishes offered both at Yellowtail and Kumi.

Born in Korea and raised in Colorado, Chef Akira Back has been named "Rising Star" by Restaurant Hospitality and "Best Chef in Las Vegas" by Las Vegas Weekly. Before opening Yellowtail Japanese Restaurant & Lounge in 2008, the professional snowboarder turned chef studied under top celebrity chefs and industry leaders throughout the world, including Masaharu Morimoto and Brian Nagao. Chef Akira Back also led the kitchen as Executive Chef of Nobu Matsuhisa's namesake restaurant in Aspen in 2003.
